Ingredients

MB:
1.5 lbs pork
1 large shallot
A lot of garlic
Jicama - 1/5-1/6 shredded
3 green on
Pepper
2T oyster
2T fish
1 T soy
3 T panko
1 T sugar


SAUCE:
8-10 Roma tom

Toppings: cucumber, red onion, carrot, jalapeño, green on tops

Instructions

Remove tom pits, salt, oil, roast 400* 10-15 min

Mix pork, half gar, 1/3 shallot, bottom half (whites) of green on, all jicama, oyster, fish, soy, pepper, Panko, sugar

Form MBs (size of nans Swedish MBs), high heat pan sear, remove

Dice tomatoes, Sauté gar, shallot, tom paste. Add tom, fish sauce, sugar, MBs

Simmer 10 min, serve on baguette

Makes 20 MBs
