Ingredients
1/3 cup mayonnaise
2 tablespoons ketchup
2 tablespoons Cholula hot sauce
3 tablespoons chopped pickles
1 1/2 lb of the best fattiest hamburger meat you can find, not lean
1/5 teaspoons kosher salt
1/5 teaspoons black pepper
8 teaspoons Dijon mustard
4 hamburger buns
4 lettuce leaves
4 big tomato slices
4 slices American cheese
1/2 cup vegetable oil
2 cups corn flour
2 teaspoons paprika
1 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper

1/2 cup beer
2 jumbo sweet or yellow onions

Instructions
Make Chrissy's Special Sauce:
1. In a bowl, stir together the mayo, ketchup, Cholula, and pickles
Make the patties:
2. In a bowl, with your hands, gently combine the meat with the salt and pepper and gently form 4 patties. (Do not mash and press)
3. Smear 2 teaspoons of Dijon mustard on top of each patty
4. Heat a griddle or cast iron skillet over medium-high heat and when very hot, cook the burgers mustard side up for 3 minutes. Flip and cook 3 minutes for medium rare 4 for medium
Assembler the burger
5. lightly toast the bun, Spread a good amount of special sauce on the bottom of each bun then top with a lettuce leaf and a slice of tomato.
