Ingredients
3 pounds ripe fresh tomatoes, peeled, seeded, and coarsely chopped
2 tablespoons olive oil
3 cloves garlic
2 tablespoons tomato paste
3 tablespoons fresh basil leaves, chopped, or 2 teaspoons dried leaves, crushed
1 teaspoon sugar
1 teaspoon salt
1/4 teaspoon freshly ground black pepper

Instructions
1. In a large, heavy saucepan, heat oil over moderate heat and cook garlic for 1 minute. Add tomatoes, tomato paste, basil, and sugar, and bring to a boil, stirring constantly. Reduce heat and simmer until the sauce thickens, about 12 to 15 minutes.
2. Add salt and pepper. Spoon over hot, drained pasta, toss lightly, and serve sprinkled with grated Parmesan cheese if desired.
