Parmesan Crusted Cod by

Ingredients

4 cod fillets (about 6 ounces each)
1/2 cup grated Parmesan cheese
1/4 cup almond flour (or breadcrumbs)
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon paprika
Salt and pepper, to taste
2 tablespoons olive oil

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.

In a shallow dish, combine grated Parmesan cheese, almond flour (or breadcrumbs), garlic powder, dried oregano, paprika, salt, and pepper. Mix well to combine.

Pat the cod fillets dry with paper towels and season both sides with salt and pepper.

Dip each cod fillet into the Parmesan mixture, pressing gently to coat both sides evenly.

Place the coated cod fillets on the prepared baking sheet. Bake 12-15 minutes.
