Veggie Fritters by

Ingredients
1 large or 2 small zucchini, shredded
2-3 large carrots shredded (don't have to peel)
2 eggs, beaten
1 cup oats, ground to flour
3/4 cup shredded cheese
S&P
onion & garlic powder
Lawry's (or any other seasonings of your choice)

Instructions
Take shredded veggies and squeeze out as much water as possible with towel.
Mix veggies, egg, oat flour, spices, and cheese in a bowl.
Heat olive oil in a pan over med-high heat, form mixture into flat fritters and place in pan.
Cook 2-3 minutes per side, or until golden brown. Cover with lid while cooking to keep in moisture/even cook through.
Place on paper towel to drain excess oil when removing from pan.
If mixture is too "wet", add a little more oat flour, or some breadcrumbs/panko; if too "dry", add another egg.
