Ingredients
- 1 cup all-purpose flour
- 1/2 cup cooked ground turkey or chicken (or your choice of ground meat)
- 1/2 cup spinach (chopped, fresh or frozen)
- 1/4 cup shredded cheese (cheddar, mozzarella, or your favorite cheese)
- 1 tsp baking powder
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 2 large eggs (for binding)
- 1/4 cup milk (any kind – dairy or non-dairy)
- 1 tbsp olive oil (optional, for added moisture)
Instructions
Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray or line it with muffin liners.
If you haven’t already, cook the ground turkey (or other meat) in a skillet over medium heat until browned and fully cooked. Drain any excess fat, and set it aside to cool slightly.
In a medium-sized bowl, combine the all-purpose flour, baking powder, garlic powder, onion powder, salt, and pepper. Stir to combine.
In another bowl, whisk together the eggs, milk, and olive oil (if using).
Add the cooked ground meat, chopped spinach, and shredded cheese to the dry ingredients. Then pour in the wet mixture (egg, milk, and olive oil). Stir everything together until fully combined.
Divide the mixture evenly between the 12 muffin cups. Each should be about 3/4 full. The batter will be thick.
Place the muffin tin in the oven and bake for 20-25 minutes or until the muffins are golden brown on top and a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
