Cheesecake Baked Apples
1 (8-ounce) package softened cream cheese + 1 teaspoon vanilla extract + 1 egg + 1/4 cup sugar + sliced almonds.
Whisk all of the ingredients together (except for the almonds) and fill apples. Bake 25 minutes at 350°F, then top with sliced almonds. Serve the apples warm or chilled. Makes four apples.
Pumpkin Pie Baked Apples
1 cup pumpkin purée + 1/4 cup softened butter + 1/4 cup maple syrup + 1 tablespoon pumpkin pie spice + graham cracker crumbs.
Combine the pumpkin purée, softened butter, maple syrup, and spice. Fill the apples. Bake 25 minutes at 350°F. Top with the graham cracker crumbs before serving. Makes four apples.
Peanut Butter Mousse Pie Baked Apples
Equal parts peanut butter and Greek yogurt, plus a touch of honey.
Whisk all of the ingredients together and fill your apples and bake at 350°F for about 25 minutes. Drizzle with extra honey before serving.
Apple Cheddar Pie Baked Apples
1/4 cup melted butter + 4 teaspoons brown sugar + 2 teaspoons cinnamon + 1/4 cup shredded cheddar cheese.
Chop the apples removed from coring the apples and toss with the butter, cinnamon, and sugar. Fill apples. Bake at 350°F for 15 minutes. Remove from the oven and top with cheese and broil until the cheese is bubbly and melted. Makes four apples.
Pecan Pie Baked Apples
1 cup pecans + 1/4 cup butter + 1/4 cup brown sugar + 2 teaspoon cinnamon + 1 teaspoon vanilla extract + 2 eggs.
In a small saucepan heat the butter and sugar until melted. Add the pecans, cinnamon, and vanilla extract and stir to coat. Remove from heat. Once the mixture cools a bit, stir in eggs. Fill apples. Bake at 350°F for 25 minutes. Makes four apples.
