Arlines Veggie Beef Soup by

Ingredients

1 64 ounce bottle of V8 ( or 2 46 ounce bottles )
Flat iron beef or short rib beef 1 1/2 - 2 pounds
Fresh veggies- corn, beans, carrots, celery etc.
one medium onion ( and a couple cloves of garlic- minced)
pasta ( I used orzo) - about 1/2 of the box

Instructions

Cut meat into big chunks. Pour some olive oil into a big dutch oven and add raw meat, onion and garlic. Boil then simmer until meat shreds apart with a fork. About an hour or so. Take the meat mixture out of dutch oven and add the V8 and the veggies to cook. Cook veggies in liquid and when they are the desired doneness ( not too over cooked) add pasta and cook pasta until softened. Add meat and reheat in V8 and then serve.
