Spaghetti cacio e pepe by

Ingredients
8 oz. spaghetti
4 oz butter ( 1/2 stick )
3/4 - 1 tablespoon of black pepper freshly cracked
1/2 - 3/4 cup freshly grated parmesan cheese

Instructions
Bring a pot of salted water to a boil. ( if you buy more then use about a 50 cent coin to measure)
Add pasta and cook until al dente ( do not over cook it )
While pasta cooks, melt butter in a large saute' pan over medium heat ( don't brown ) just melt the butter.
Add fresh cracked pepper
When butter begins to bubble, turn off the flame and remove from the heat.
When pasta is ready- add noodles and 2-3 tablespoons of pasta water to the saute' pan.
Cook over medium heat until the liquid bubbles and thickens- tossing the pasta as needed.
Remove from the heat and add parmesan- tossing vigorously until ingredients are incorporated into a creamy sauce.
Garnish with additional black pepper and parmesan.
Serve immediately.
