Chicken Tetrazzini by

Ingredients
1 package spaghetti ( about 7 oz ) broken into thirds
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup chicken broth
1 cup heavy whipping cream
2 cups cubed cooked chicken or turkey
2 tablespoons cooking sherry
1 can 4 oz sliced and drained mushrooms ( 2 cans )
3/4 cup or more shredded parmesan cheese
Topping
1/4 cup melted butter
1 1/2 cups crushed Ritz crackers ( about 40 )
Mix butter with crushed crackers
Drizzle on top of the parmesan cheese

Instructions
Turn on oven to 350.
1. Cook and drain spaghetti
2. Melt butter in a frying pan ( large one ) over low heat
3. Stir in flour, salt and pepper into butter.
4. Cook, stirring constantly until mixture is smooth and bubbly
5. Remove from heat
6. Stir in broth and whipping cream and heat to boil
7. Stir constantly for 1 minute
8. Stir in sherry, spaghetti, chicken and mushrooms
9. Pour spaghetti mixture into ungreased 2 quart casserole
10 Spread cheese over top of casserole
11. Spread bread crumbs on top of cheese
12. Bake uncovered for about 30 minutes or longer until bubbly in center
