Citrus tossed salad with cranberry vinaigrette by

Ingredients

4 cups torn mixed greens
1 cup orange sections and/or red grapefruit sections
1 cup jicama cut into thin, bite-size strips
1 small red onion, sliced and separated into rings


Cranberry vinaigrette
In a screw top jar combine 1/4 cup cranberry juice cocktail
1 tablespoon salad oil
1 tablespoon vinegar
1 teaspoon snipped fresh or 1/4 teaspoon crushed, dried basil
1/2 teaspoon sugar
Cover and shake well. Makes about 1/3 cup.

Instructions

In a large salad bowl combine torn mixed greens, orange and /or grapefruit sections, jicama, and red onion.

Shake cranberry vinaigrette well. Pour over salad. Toss lightly to coat. If desired, toop with Italian croutons. Serve immediately. Makes 6-8 servings.
