Twice Baked Baby Reds with Nueske's Bacon by

Ingredients

12-14 medium -small red potatoes scrubbed
1/4 cup butter
1/2 cup Parmesan cheese -grated
1 cup Cheddar Cheese- shredded
10 slices Nueske's Cherrywood smoked bacon- fried and crumbled
1 cup sour cream
2 eggs, slightly beaten
2 green onions, chopped
1 tsp. Salt
1/4 tsp. Pepper

Instructions

Preheat Oven to 375

Place potatoes in large saucepan. Cover with water and bring to a boil. Reduce heat to simmer and cover pan. Cook for 15-20 minutes or until tender. Allow the potatoes to cool and scoop out the inside of the potatoes, leaving a thin shell to stuff.

In a large bowl, mash the scooped-out part of the potatoes with the butter. Reserve 1/4 cup each of the Parmesan cheese, cheddar cheese, and bacon for garnishing. Add remaining cheeses, bacon, sour cream, eggs, onions, salt, and pepper to the mashed potato mixture. Spoon the mixture into the potato shells and top with reserved cheeses and bacon. Place on baking sheet and bake for 20 minutes at 375.
