Roasted Butternut Squash by cpeirson

Ingredients

1 butternut squash olive oil salt and pepper to taste paprika or nutmeg

Instructions

Rinse, dry and cut the squash lengthwise. Remove and discard the seeds and excess fiber. Peel. Cut into 2" cubes, toss with olive oil and season with salt and pepper, paprika or nutmeg. Place in roasting plan and bake in 400 oven for 20-30 minutes.
