Barley Salad by

Ingredients
1 cup of pearl barley
2 cup water
a dash salt
2 ripe tomatoes, chopped
1/4 cup chopped yellow or red onion
1 cucumber, chopped
2 tsp minced garlic
1/4 cup balsamic vinegar
Instructions
1. Bring water and salt to a boil, add barley and lower heat, simmer until desired tenderness, stirring occasionally. Add water if needed.
2. Combine chopped tomatoes, cucumber, onion, garlic and balsamic vinegar in a bowl, and place in refrigerator.
3. When barley is done, allow to cool slightly and add to vegetable mixture, allow it to set until cool. May be served room temp or cold.
