Marmalde-Glazed Carrots by

"This side dish is ideal when you'd like to serve your vegetables in a different way for a special dinner," says Barb Rudyk of Vermilion, Alberta. Cinnamon and nutmeg season baby carrots that are simmered with orange marmalade and brown sugar.
Ingredients
2 lbs fresh baby carrots
1/2 c orange marmalade
3 tbs cold water, divided
2 tbs brown sugar
1 tbs butter, melted
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg
1/8 tsp pepper
1 tbs cornstarch
Instructions
1. In a 3 qt slow cooker, combine the carrots, marmalade, 1 tbs water, brown sugar, butter and seasonings.
2. Cover and cook on low for 5-6 hrs or until carrots are tender.
3. Combine cornstarch and remaining water until smooth. Stir into carrot mixture.
4. Cover and cook on high for 30 min or until thickened.
