Really good meatballs ( Italian style) by
Ingredients
1 lb. ground veal
1 lb. ground pork
1 lb. ground beef
4 slices white bread ( crusts off ) torn into pieces
1 1/2 cup milk
3 eggs
2 cups freshly grated parmesan cheese
1 cup grated pecorino cheese
6 tablespoons chopped flat leafed parsley
2 tablespoons kosher salt
1/4 teaspoon pepper
2 cloves garlic minced
1 1/2 cup flour ( I use Wondra)
1/4 cup - 1/2 cup grapeseed oil
Instructions
Use a large table top mixer ( not a hand mixer )
1. Combine all the ingredients ( except for the flour and oil) into a stand mixer fitted with a flat blade.
2. Mix on medium -low speed for 1 minute.
3. With a teaspoon scoop out some pieces of meat and gently roll them in wet hands about the size of a golf ball. Don't compress too much - the meat will be soft
4. Put flour in a bowl and toss the meat balls in flour- so all of it is coated
5. Heat grape seed oil over medium heat in a large skillet and working in batches add floured balls. Cook them until golden brown all over - about 8-10 minutes total.
6. Remove from skillet and add to your warmed sauce.
7. Serve with pasta.
