Jamaican Jerk Chicken by melc

Ingredients

Chicken Drumsticks Marinade 4 spring onions - chopped 1 tsp minced chilli 1 tsp minced ginger 2 tsp minced garlic 2 tbsp of coconut sugar 2 tbsp of coconut aminos 1 tbsp all spice 1 tbsp lime juice 2 tsp thyme Salt and pepper

Instructions

To make the marinade place the onions, chilli, ginger and garlic in a food processor. Process until finely chopped.
Add remaining ingredients and process until combined.

Make two cuts crossways about 2cm apart down to the bone on each drumstick. Place in a large bowl with the marinade.

Toss to coat evenly. Cover and refrigerate for 2 hours.

Pop the chicken into the crock pot and cook on low for around 6 hours. If you are going to cook in the oven cook at 180 degrees for 25 minutes.
