Mexican Rice by

Ingredients
2 tbsp cooking oil
1/2 onion
3 cloves garlic
2 cups uncooked white rice
1/2 tbsp chili powder
1 tsp cumin
1/2 tsp oregano
3 cups water
1 tsp salt
1/2 can roasted red peppers
Instructions
Finely dice onion, mince garlic
Add onion, garlic, oil to medium sauce pot, saute until onions are soft
Add uncooked rice, chili powder, cumin, and oregano to pot, cooking about two minutes, until rice makes crackling noise
add water, salt, and roasted red peppers, bring to low boil, cover and cook about 15 minutes, until rice is soft
Serve with chimichurri steak and bean/corn mixture
