Corn and Avocado Salad (Vegan) by AJ

Ingredients

6 ears of uncooked sweet corn, husked and cut from cob (about 3 cups or 1 1/2 cans) 1/2 small-medium red onion, finely diced 2 small or one large fresh avocado 3 tablespoons lime juice 1 teaspoon salt 3 heaping tablespoons vegan mayo

Instructions

Cut corn from cob. Use raw.

Add raw corn and all other ingredients to mixing bowl.

Mix and serve or refrigerate.
