Banana Cake by
Ingredients
4 Ripe bananas
2 tsp lemon juice
3 C flour
1 1/2 tsp baking powder
1/4 tsp salt
3/4 C softened butter
2 C sugar
3 eggs
2 tsp vanilla
1 C buttermilk
1/2 C softened butter
8 oz cream cheese room temp
1 tsp vanilla
3 1/2 C powdered sugar
Instructions
1. Preheat oven to 275F. Grease and flour a 9 x 13 inch rectangular pan.
2. Mash bananas with lemon juice and set aside.
3. In a bowl, mix the flour, baking powder, salt and set aside.
4. In the mixer bowl, beat together the butter and sugar.
5. Add the eggs, one by one, then add the vanilla.
6. Add flour and buttermilk, alternating back and forth.
7. Incorporate the banana puree and mix until homogeneous.
8. Pour the dough into the prepared pan.
9. Bake for 1 hour and 10 minutes, until a toothpick inserted in the center, comes out clean.
10. When cake is finished, place in fridge to cool.
11. Prepare the frosting, cream butter and cream cheese together.
12. On low speed, add vanilla extract and powdered sugar. Blend until smooth and silky.
13. Frost the cake when completely cooled and decorate with banana or strawberry slices if desired.
