Mincemeat Cookies by Kraus Family

Ingredients

1 c. shortening 1-1/2 c. sugar 3 eggs 3 c. flour 1 t. flour 1 t. baking soda 1/2 t. salt 1-1/3 c. (half of a 28 oz. jar) ready-to-use mincemeat

Instructions

Preheat oven to 375 degrees. In large mixing bowl, beat shortening and sugar until fluffy. Add eggs; beat well. Stir together dry ingredients; gradually add to shortening mixture. Mix well. Stir in mincemeat.

Drop by rounded teaspoonfuls, 2" apart, onto greased baking sheets. Bake 8-10 minutes or until lightly browned. Cool. Frost if desired.
