Meredith's Chicken & Shells by BR Hahn

Ingredients

3-4 Tbs. olive oil 1 pound boneless chicken sliced bite sized(or whole rotisserie) 1+ cup sliced fresh mushrooms 3+ cups chopped fresh spinach(not baby) 1/2 cup sliced scallions 1/2 cup choppend fresh parsley(or dried) 1 c. heavy cream(or lite) 1 4 ounce container garlic & herb cheese 1/2 cup grated fresh parmesean cheese salt & pepper to taste 12 ounces medium shells, cooked

Instructions

Saute chicken in wok or large skillet over medium heat.
Add mushrooms, scallions, spinach & parsley.
Saute 5-10 minutes tioll cooked. Lower heat and pour in heavy cream, crumble in garlic herb cheese, add parmesean cheese. Stir till melted.
Season with salt & pepper.
Add to cooked pasta, mix and serve with shredded parmesean.

For larger healthier:
Use whole rotisserie chicken, whole package of fresh spinach,
1 1/2 cups light cream or half 'n half, 3/4 cup scallions, 1 1/2 cup sliced mushrooms, large container of garlic herb cheese and 16 ounces of pasta
