Fluffy Peach Pudding by ReliefSociety

Ingredients

Drain, reserving syrup: 1 can (1 lb.) sliced peaches Dice peaches and set aside. Combine in a saucepan: ¼ tsp. salt Reserved liquid from peaches Bring to a boil over medium heat. Stir in: 1 cup pre-cooked rice. Cover, remove from heat. Let stand for 5 minutes, or until liquid is absorbed. Add: 21/4 cups milk 1 package (3 oz.) vanilla pudding and pie filling 1 egg yolk, slightly beaten.

Instructions

Mix well. Cook over medium heat. Stirring constantly, until mixture comes to a boil and is thickened. Remove from heat. Add:
¼ tsp. vanilla
Cool, stirring occasionally to prevent film from forming.
Beat until foamy 1 egg white
Gradually add, while beating
1 T sugar
Beat until stiff peaks form when beater is pulled up. Fold into cooled pudding mixture. Fold in:
Drained peaches
Spoon into serving dish or dessert dishes. Top with peach slices or whipped cream and a maraschino cherry half.
