Sautéed Kohlrabi with Ramps and Eggs by
Ingredients
1/2 of Veggie Box ramps, chopped
Veggie Box kohlrabi
Greens: Veggie Box bok choy or de-stemmed kale
2 eggs
Salt and pepper to taste
Instructions
Wash and chop the greens. Peel and chop the kohlrabi. Chop the ramps, both leaves and bulb. Sautee the kohlrabi in butter, covered, for a few minutes until they begin to soften. Then add the ramps and greens, cooking for a few minutes more. Fry two eggs and place on top, and season with salt and pepper. Enjoy!
