Sweet Potato Apple Soup #332208 by

This soup is perfect for a fall day, or goes great with Thanksgiving Dinner! I got it from my friend Chuck and made my first batch. It's amazing!
Ingredients
3 leeks
1-2 tbs butter
3 med sweet potatoes
2 med apples
2 med carrots
5 c wter
3/4 tsp nutmeg
1 tsp salt
1/2 tsp pepper
1 c applesauce
1 tbs butter
1 cup light cream
cilantro
Instructions
1. Chop white section of leeks, saute in 1-2 tbs butter until soft.
2. Peel and cut sweet potatoes and apples intion 3/4 inch cubes.
3. Thinly slice carrots.
4. Cover sweet potatoes, apples, and carrots with 5 c of water.
5. Add nutmeg, salt, and pepper.
6. Simmer while covered for 20 minutes.
7. Puree in food processor, blender or with immersion blender.
8. Add applesauce and 1 tbs butter - if it looks took thick at this time, add some water.
9. Cook on low for 15 min
10. Add cream and simmer for 10 moor min, stirring frequently.
11. Garnish and cilantro and enjoy!
