Jalapeno Beet Hummus by Allen Neighborhood Center

Ingredients

2 small Veggie Box golden beets 1 can chickpeas (15-ounce can, drained) 1 Veggie Box jalapeno 2 cloves garlic 2 tablespoons tahini 2 tablespoons lemon juice 2-4 tablespoons water ½ teaspoon salt

Instructions

Prepare the beets:



Peel the skin off the beets and cut them into quartered pieces.



Prepare the hummus:



Add all ingredients for the hummus, including the beets, to a food processor or blender and process until the mixture is creamy and smooth.



Take a taste and adjust the seasonings if you prefer.



Store in an air-tight container in the refrigerator for up to 3 days.
