Southwestern Salad by
Ingredients
Salad:
Full share Veggie Box salad mix, washed and dried
1 share Veggie Box tomatoes (any variety), diced
2 Veggie Box sweet peppers (any variety), diced
2 ears of Veggie Box corn, cooked and cut from the ear
1/2 can black beans, rinsed
Pan fried and seasoned chicken or tofu, sliced into strips or bite sized pieces
Dressing:
1/2 cup ranch dressing
1 or 2 chipotle peppers in adobo sauce, finely diced
Instructions
Rough chop your salad mix, then gently mix together all other ingredients. Stir together the ranch and chipotle peppers, then top each serving with a generous spoonful (or two!).
Shortcuts for the weary:
- Use a rotisserie chicken and shred it into the salad.
- Skip the chipotle peppers in adobo sauce. Stir in some garlic powder and chipotle powder.
