Roasted Carrots by Allen Neighborhood Center

Ingredients

1 pound Veggie Box carrots, cut in half lengthwise 3/4 tablespoons olive oil 1/4 teaspoon kosher salt 3 thyme sprigs 2 tablespoons chopped fresh parsley

Instructions

Preheat oven to 400°F. Combine Veggie Box carrots, olive oil, kosher salt and thyme sprigs on a large baking sheet; toss to coat. Bake at 400° for 35-40 minutes or until tender, turning carrots after 20 minutes. Discard thyme sprigs. Place carrots on a serving platter; garnish with parsley
