Instant Pot Key Lime Cheesecake by Traveling Marlins

Cheesecake tastes best if you let it sit in the frig over night.

I use a 6 Qt Instant Pot.

Ingredients

Crust: 1 package of graham crackers (there's 8 in a package) 4T melted butter pinch of salt 2t brown sugar Filling: 16 oz cream cheese, softened 14 oz can sweetened condensed milk 1/4C sugar Lime zest (about half a lime) Pinch of salt 1T cornstarch 2 eggs 1/2C Nellie & Joe's Key West lime juice 2T flour Spray whip cream (or Cool Whip)

Instructions

Crust:
Grind crackers until fine. Mix with butter.
Spray pan with Pam.
Put crust in pan. Using the bottom of a drinking glass, mash crust into the bottom of the pan & a little up the side.

Filling:
Mix all ingredients, excluding the whip cream.

Instant Pot:
Add 1C water in the instant pot.
Put prepared cheesecake on the trivet & using the trivet handles, lower it into the instant pot.
Set to sealing, not venting.
Set to Manual for 40 minutes.
Let sit for 30 mins BEFORE opening the instant pot.
Blot away any water on the cheesecake with a paper towel.

Top with a dollop of whip cream & enjoy!
