Quinoa and Turkey Meatloaf by Camia

This meatloaf has so much flavor, no one will guess how healthy it is.

Ingredients

1/2 C quinoa 1 C water 1 lb ground turkey 1 onion, chopped 5 cloves garlic, chopped 1/2 tsp salt 1/4 tsp black pepper 1/4 tsp ground ginger 3/4 C milk 2 eggs 2 tbsp worcestershire sauce 1/4 C brown sugar 1/2 C ketchup

Instructions

Preheat oven to 350 degrees.
In saucepan add water and quinoa and bring to boil. Decrease heat, cover and simmer until cooked, about 5-7 min.
In large skillet add ground turkey, salt and pepper and cook until browned.
In large mixing bowl combine cooked turkey, chopped onion, garlic, milk, eggs, ginger, 1 tbsp worcestershire sauce, and about 3/4 C cooked quinoa. Mix thoroughly and press into loaf pan.
In small mixing bowl combine brown sugar, ketchup, and the other tbsp worcestershire sauce. Spread the ketchup mixture over the loaf.
Bake for 1 hour or until juices are clear.
Serve with more of the ketchup mixture if desired.
