Tzatziki by Ds1124

Ingredients

1 cup diced or shredded cucumber, seeds scooped out and discarded from the inside before dicing or shredding 1.5 cups Greek yogurt 2 tablespoons chopped dill 1 tablespoon olive oil 2 teaspoons chopped parsley 2 teaspoons minced garlic Juice from 1 lemon (about 2 tablespoons), plus 2 teaspoons lemon zest Pinch of salt and pepper, to taste

Instructions

Dice or shred the cucumber, strain excess water with a dish towel.
Add all ingredients to a bowl and mix until combined.
Taste the sauce and add any additional garlic, salt or pepper to taste.
