Personal Quiche by
Ingredients
1 low carb tortilla (I used a Hero tortilla)
2 eggs
3 Tbsp good culture low fat cottage cheese
2 Tbsp bell peppers, chopped
1/4 cup shredded Colby Jack cheese
salt & pepper to taste
Instructions
DIRECTIONS:
1. Preheat air fryer to 350 degrees Fahrenheit.
2. Grease a round tray that will fit into the air fryer. *I used a 7” tray.
3. Place the tortilla into the tray.
4. Crack the eggs onto the tortilla and whisk them a bit.
5. Add in the cottage cheese, bell peppers, salt & pepper and stir until combined.
6. Top with the shredded cheese and then air fry for 10 minutes or until the middle is no longer jiggly.
