Banana Chocolate Chip Muffins by
Ingredients
1 C. Sugar
1/2 C. butter or margarine (I used butter)
2 eggs
2 C. flour
1/4 tsp. salt
1/2 cup milk, soured with a bit of vinegar...maybe a tsp.
1 tsp. baking soda
1/2 c. chocolate chips (optional)
Instructions
Mix together: sugar, butter, and eggs.
add: flour (I used regular white flour for freezer meal but normally I use whole wheat flour and the kids still love them), salt, soured milk. Add 1 tsp. baking soda to milk/vinegar and mix.
Mix well. In separate bowl mash 3 ripe bananas and add to main bowl and mix well. Stir in chocolate chips. Makes one loaf of bread or about 16-18 muffins.
if you are making a loaf of bread bake at 350 for 1 hour. If you're making muffins, bake for 20 minutes.
