Carrot Ribbon Salad by Allen Neighborhood Center

Ingredients

4 Veggie Box carrots 1 stalk of green onions/scallions/Veggie Box green garlic 1 clove of garlic 1 tablespoon sesame oil 1 tablespoon soy sauce or tamari 1 tablespoon maple syrup or honey 2-3 tablespoons rice vinegar or apple cider vinegar Pinch of salt 1 teaspoon sesame seeds (if desired) 1-2 teaspoons chili flakes/chili crisp (if desired)

Instructions

Thoroughly wash carrots, then use a peeler to slice into ribbons and put into a large bowl.

Thoroughly wash green onions/scallions/green garlic, thinly slice, and add to bowl.

Finely mince garlic using a knife or a microplane and add to bowl.

Add remaining ingredients and thoroughly combine. Taste and adjust vinegar, sweet, and spice levels to preference.
