Dijon Chicken Salad by Kraus Family

Ingredients

Salad: 4 c. cubed cooked chicken 1 c. celery, sliced 1 c. seedless green grapes, halved 1 c. seedless red grapes, halved 1/4 c. dried apricots, chopped 1/4 c. green onions, sliced Dressing: 3/4 c. mayonnaise 2 T. honey 1 T. Dijon mustard 1/2 t. salt 1/8 t. pepper Lettuce 1/2 c. almonds, sliced

Instructions

In bowl, combine salad ingredients. In a separate small bowl, combine the dressing ingredients and mix well. Stir into chicken mixture. Cover and refrigerate until serving.
Serve on lettuce-lined plate. Sprinkle with almonds.
