Kohlrabi Cabbage Coleslaw by
Ingredients
½ head of cabbage, shredded
1 kohlrabi, peeled and grated
2-3 carrots, washed and grated
4 tablespoons sugar, more to taste
1 tablespoon and 1 teaspoon salt
½ cup mayo (can be vegan)
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
Black pepper to taste
Instructions
Prep all veggies by cutting and/or grating to preferred size.
Mix 3 tablespoons sugar and 1 tablespoon salt. Sprinkle over cabbage and kohlrabi, then mix thoroughly. Let sit for at least 10 minutes to release moisture.
Make dressing by whisking together mayo, apple cider vinegar, lemon juice, 1 tablespoon sugar, and 1 teaspoon salt. Add more sugar to taste, 1 tablespoon at a time.
Drain or squeeze cabbage and kohlrabi, then toss with carrots and dressing. Add salt and pepper to taste.
