Flying Farmer Chicken Salad by Kraus Family

Ingredients

5 c. cooked chicken, in chunks 2 T. vegetable oil 2 T. orange juice 2 T. vinegar 1 t. salt 3 c. cooked rice 1-1/2 c. small green grapes 1-1/2 c. celery (optional) 13.5 oz. can pineapple chunks or tidbits 1 c. toasted, slivered almonds 1-1/2 c. mayonnaise 11 oz. mandarin oranges

Instructions

Combine chicken and next four ingredients. Let stand while preparing other ingredients, or refrigerate overnight.

Gently toss together all ingredients, adding the mandarin oranges last because they squash easily. Serves 12.
