White Bean Tacos by
Ingredients
1 onion, diced
1 jalapeno (seeded and diced or canned)
3 cloves garlic
1.5 tsp za'atar (or Mediterranean seasoning)
1/2 tsp paprika
1/2 tsp oregano
S&P to taste
1 tbsp tomato paste
2 cans white beans - drained
1/2 cup dill, chopped
juice from 1 lemon
feta cheese
tortillas
Instructions
Heat oil, add onions, garlic, jalapenos, cook 5 minutes.
Add all remaining filling ingredients to skillet, cook 5 minutes.
Mash until mixture starts to bind together (or put in food processor).
Add mixture to tortillas, top with feta, fry in pan until cheese is melted and tortillas are browned.
TO BAKE: oven to 425F, add to parchment lined pan, bake 8-10 minutes flip, bake 8-10 more.
Serve with tzatziki.
