Egg and Mushroom Frittata by caneilson

Ingredients

2 whole eggs 1-1/2 c. egg whites 3/4 c. chopped mushrooms 1/4 t. garlic, minced 1/4 t. thyme 1/4 t. tarragon 1/4 t. baking powder salt and pepper to taste

Instructions

Beat eggs and egg whites together, don't over-mix
Finely chop fresh herbs
Lightly sautee mushrooms and herbs then add to egg mixture
Pour into oven-friendly round dish (cast iron preferred)
Bake 40 minutes at 350 degrees or until stick comes out dry
--Separate into 4 muffin tin wells and bake for 20 minutes
