Anaheim Chili Cheese Bake (Lee Falk) by
Ingredients
4 Anaheim chiles, roasted, seeded and diced
1 c shredded cheddar cheese
1 c shredded monterey jack cheese
6 eggs
2/3 c milk
1 t salt
1 t sugar
Freshly ground pepper to taste
2 T flour
4 oz. cream cheese
Instructions
Bring eggs, milk and cream cheese to room temperature. Preheat oven to 325. Butter a heavy 8-inch square baking pan. Spread the chiles over the bottom. Combine the shredded cheeses and set aside 1/2 c. Sprinkle remaining cheese over the chiles.
In a medium bowl, beat together the eggs, milk, salt, sugar, pepper and flour. Add the cream cheese and beat it in. Pour over cheese and chiles. Sprinkle the 1/2 c cheese over the top.
Bake 45 to 50 minutes, until eggs are set. Let cool slightly before serving. Serves four.
