Ingredients
1/4 coconut flour
1/4 almond meal
4 eggs
2 tbsp coconut oil
2 tbsp unsweetened applesauce
1 tsp flaxseed/linseed
1 tsp baking powder
1/2 tsp sea salt
Instructions
Preheat the oven to 190 degrees. Line a baking tray with baking paper.
Beat eggs, coconut oil and apple sauce with a hand blender
In another bowl sift together coconut flour, almond flour, flaxseed/linseed and baking powder and salt. Pour egg mixture into flour mixture and mix until combined.
Scoop thick batter onto prepared sheet.
Place in the oven and cook for around 15 minutes.
Leave to stand for 5 minutes before serving.
