Instructions

1. place the chicken in a pot. There can be some overlap.
2. Cover the chicken with 1 inch of water.
3. Bring the water to a gentle boil and then reduce to a simmer.
4. Cooke the chicken for 8-16 minutes depending on the amount of chicken. You want the chicken to reach about 162F
5. Remove from burner, drain the water, and put a lid on the pot.
6. Let residual heat finish cooking the chicken for 5 minutes. This should get the chicken to the desired 165F.
7. Shred the chicken. (use a hand mixer, two forks, of gloved hands)
