Sweet Potato Casserole by kathleenjensen

Ingredients

1 cup brown sugar 1/2 cup pecans 1/4 cup chilled butter (1/4 " pieces) 5 pounds sweet potatoes (1.5 " pieces) 4 eggs 3 T maple syrup 2 T vanilla 1 T lemon juice 2 t. salt cinnamon and nutmeg ?

Instructions

1. Mix sugar, pecans and butter - cover and chill
2. Butter 9x13 pan
3. Cook potatoes (in boiling H2O) - puree or mashed
4. Beat eggs, syrup, vanilla, lemon juice and salt - mix in potatoes
5. Pour in pan and sprinkle topping over

Bake about 1 hour - let stand 15 minutes
