Chicken Fajitas by
Ingredients
3 lb. skinless, boneless chicken breasts
Marinade:
2 T. vegetable oil
6 T. lime juice (about 2 or 3 limes)
2 t. ground cumin
1 t. salt
1/4 t. pepper
1-1/2 t. liquid smoke
Flour tortillas
Condiments:
2 sweet red peppers, sliced thinly and sautéed
2 green bell peppers, sliced thinly and sautéed
1 large onion, sliced thinly and sautéed
Tomatoes, sliced
Olives, sliced
Sour cream or yogurt
Lettuce, shredded
Cheese, grated
Salsa
Instructions
Thaw and place chicken in Ziploc bag. Mix the marinade ingredients and pour over chicken in bag. Marinate in the fridge for about 2 hours.
Broil chicken for 15-20 minutes, turning over every 5 minutes until done.
Slice chicken thinly, and serve with tortillas and condiments, above.
