Ingredients
5 medium beets
1 small onion
1 small potato
2 tbs vegetable oil
2 tbs white vinegar
2 tbs brown sugar
1 tbs water
1/2 tsp salt
1/4 tsp pepper
Instructions
1. Peel beets and shred coarsely.
2. Place on a greased 1 qt casserole.
3. Peel and grated onion and potato and stir into beets.
4. In a small bowl; stir together oil, vinegar, sugar, water, salt and pepper.
5. Stir into vegetable mixture; cover tightly and bake in a 350 degrees over for 30 minutes.
6. Stir once or twice during cooking.
