Zoodles Frittata by

Ingredients
Zucchinis made into zoodles
Mushrooms - sliced
Pumpkin, cooked and mashed
Spinach
Parmesan Cheese
Eggs, whisked and a bit of milk added
Garlic
Salt and pepper
Parsley
Tomatoes, sliced
Feta
Instructions
Preheat oven to around 180 degrees.
Peel and cut pumpkin, cook and mash
Make zucchinis into zoodles
Mix all ingredients together, except tomatoes and feta. If it does not look like there is enough egg mixture to cover the veges add another one or two. Pour into a baking dish. Sprinkle feta on top and top with tomatoes.
Cook until the egg is set.
