Sweet Potatoes by
Ingredients
2 small sweet potatoes
1 tablespoon olive oil
¼ teaspoon salt
¼ teaspoon pepper
1 teaspoon paprika
1 skinless chicken breast
3 cups black beans
1½ cup shredded cheese
guacamole
pico de gallo
Instructions
1. Preheat oven to 400.
2. Evenly slice sweet potatoes into rounds.
3. In a medium-sized bowl, toss rounds with 1 tablespoon of olive oil, paprika, salt, and pepper until well-coated.
4. Lay rounds in a baking dish and bake for 20 minutes.
5. While sweet potatoes are baking, boil chicken and shred.
6. Remove baking dish from oven. Top potatoes with shredded chicken, black beans, and cheese. Broil for 5-10 minutes or until toppings are heated through and cheese is melted.
7. Garnish with guacamole, pico de gallo, and more. Serve immediately.
