Moist Carrot Cake with Icing by Misspotae

Ingredients

CAKE: 2 cups flour 2 tsp baking soda 2 tsp baking powder 1 tsp salt 2 tsp cinnamon 1 3/4 cups sugar 1 cup vegetable oil 3 eggs 1 tsp vanilla 2 cups shredded carrot 1 cup flaked coconut 1 cup chopped walnuts 1 8oz can crushed pineapple, drained ICING: 1 8 oz package cream cheese 1/4 cup softened butter 2 cups icing sugar

Instructions

Preheat oven to 175 Celsius
Grease and flour 9x13" cake pan
Mix flour, baking soda, baking powder, salt and cinnamon.
Make a well; add oil, sugar, eggs & vanilla
Mix with a wooden spoon until smooth
Stir in carrots, coconut, walnuts & pineapple
Pour into pan
Bake 45 minutes - center will sink a bit.

Cream butter and cheese until smooth. Add sugar and beat until creamy.
