Garlic Parsley Spaghetti Squash by
Ingredients
1 spaghetti squash
2-3 cloves garlic
small handful of flat-leafed parsley or basil or spinach, chopped
s&p
EVOO
Instructions
Preheat oven to 375.
Split squash and place flat side down in a baking dish and bake for 35-40 min until tender. (Insert knife into skin and should go thru easily).
Cool slightly. Using a fork, scratch the spaghetti strands out.
Heat EVOO in a skillet over med heat. Cook the garlic until fragrant, reduce heat and add the spaghetti, s&p. Toss quickly to coat but not cook. Add the parsley and toss. Serve.
