Meatballs - Sun Dried Tomatoes and Cheese by
Ingredients
MEATBALLS:
1 lb Ground Beef or Ground Turkey
1 Egg, lightly whisked
2 Cloves Garlic
3/4 cup Panko Bread Crumbs or 3 Tbs Corn Starch
3 Tbs Parsley finely chopped
2 Tbs Chopped Basil
1/2 cup Parmesan Cheese
1 Tsp Worcestershire Sauce
1/4 Cup Whole Milk
1 Tsp Salt
1/2 Tsp Pepper
SAUCE:
1 can chicken broth
3 Tbs Corn Starch
1 can Tomato Paste
2 Cloves Garlic
1 tsp Paprika
1/2 Tsp Salt
1/4 Tsp Pepper
1 Cup Fresh Basil Leaves
6 oz Roasted Red Peppers
2 Tbs Butter
Instructions
MEATBALLS:
Combine meat, eggs, cheese, garlic, bread crumbs, oregano, and all other ingredients in a bowl. Season with salt and pepper shape into meatballs about 2" in diameter. Heat a large skillet on medium-low and cook until done. Remove from heat and cover.
SAUCE: Combine butter, roasted red peppers, basil, salt, pepper, paprika, tomato paste, in the pan. Whisk corn starch and broth, add to mixture, heat, and thicken.
When thick, add meatballs back to the mixture and cover, heat everything together for a few minutes.
Serve over rice or pasta.
